All the ingredients to prepare the potatoes
- Eggs, you can use M or L
- Parsley. I used dried parsley and dried oregano, but the best option is fresh parsley.
- Garlic cloves, you need two cloves of garlic. If you don’t have them, you can substitute them with garlic powder, but it won’t taste as good.
- Potatoes Use white potatoes for frying, not red.
- Use sunflower oil to fry the potatoes.
- Extra virgin olive oil
You can add vegetables like red peppers or green peppers.
Step by step to these homemade potatoes
The preparation of this recipe is very simple.
First, peel all the potatoes and cut them into very thin slices. In the meantime, put the sunflower oil in a pan and heat it on high. When the oil is hot, add the potatoes and fry them until they’re lightly browned.
When the potatoes are lightly browned, remove them from the pan and drain them on paper towels. Sprinkle a little salt over the potatoes and let them rest.
Put the four eggs and 2 tablespoons of water in a bowl and whisk well until all the ingredients are combined. If you’re using dried parsley and dried oregano, you can add them to the egg mixture * If you’re using fresh parsley, don’t add it yet.
Peel the two cloves of garlic and chop them very small.
Then heat a pot or saucepan. Add 2 tablespoons of extra virgin olive oil and chopped garlic. Fry the garlic and add the fried potatoes as soon as the garlic turns slightly brown. Lightly fry the fries with the oil and garlic.
Then add the egg mixture and stir the pot well. If you’ve fresh parsley, chop it and add it to the pot. Stir well until the egg is lightly cooked and combined with the potatoes and chopped garlic.
Once you see that the egg is starting to cook, take the potato and egg mixture out of the pot and transfer it to a serving plate.
Tip: When you fry the potatoes, don’t over-brown them, just brown them lightly. Don’t let them cook too long or they’ll cook along with the egg.

Can you use other spices or herbs?
Yes, and you can use almost any spice you’ve; for example, fresh oregano, chives, cilantro…
Tip: For juicy potatoes a lo pobre add a few tablespoons of water to the egg mixture.
What other ingredients can I add to the recipe?
You can add onions and caramelized red peppers, asparagus and any good Serrano ham you’ve in the fridge.
