You only need 4 ingredients to make this potato dish
- Potatoes. You can use red or white potatoes, both are possible.
- Pumpkin. I used a butternut squash pumpkin, but any type of pumpkin will do.
- Sweet paprika, salt and pepper for flavor.
Add grated cheese in the last 5 minutes of baking to top the potatoes and make them delicious.
Step by step to make these Sliced roasted potatoes
The preparation of this recipe is very simple.
First, peel the potatoes and cut half a pumpkin into very thin slices
Put a drizzle of olive oil in the baking dish and place the potato and pumpkin slices in it alternately
Sprinkle some oil, salt, sweet paprika and fresh herbs. Bake at 180-200ºC for about 40 minutes or until you see that it’s cooked.
Save cooking time by slicing the potato and pumpkin wedges as thinly as possible.
Can you freeze the dish?
I don’t recommend freezing the potato. The texture of frozen potatoes changes a lot and the dish isn’t as good. You can freeze the raw pumpkin sliced.
Can the potato be replaced by another ingredient?
Yes, you can use sweet potatoes instead of potatoes.

No, if you slice the potatoes and the pumpkin thinly, it’s best to use the oven
If you want to prepare this dish without the oven, you need to cut the pumpkin and potatoes into small cubes and roast everything in a cast iron skillet with a bit of oil. However, the cooking time will be different and you’ll have to keep an eye on the pan and check the cooking.
