Some basics you should have in your pantry
You can make a delicious and healthy recipe without planning or meal prep by having some basics on your pantry or fridge.
For me having rice on my pantry is essential. You can serve rice with tomato sauce and some fried eggs, vegetables.
Are very versatile, you can make potato salad with canned tuna, tomatoes and some olives and you have a salad ready for dinner. You can also roast the potatoes and serve it with some sausages or any meat.
- Tomato sauce.
It’s an essential on my kitchen. You can use the sauce with pasta, rice or in a pizza.
- Eggs It is essential to always have eggs in the fridge, you can improvise an omelette, a quiche, a scrambled egg, pancakes…
Frozen vegetables (for example onions, carrots, green beans, peppers…). You can buy it already frozen or buy a tone of veggies and cut them into pieces. But it has to be a vegetable that you know you can use already cut and w’ll be good in any recipe for example onion, carrot, zucchini…
Sourdough is a must to have, you can improvise a pizza with sourdough or fajitas. You can have a pizza on the table in 15 minutes if you have your sourdough well feed. And you can add any ingredient you have on your fridge. If you want to chek some recipes with sourdough click here.
Canned tuna can save you and complete a meal. You can make a pasta dish with tomato and tuna or a salad with tomato, cheese, lettuce.

Potato and Onion Baked with Rosemary and Tomatoes
All the ingredients to make this potatoes and onions baked
Potatoes: You can use any type of potato, you could use also red potatoes.
Tomatoes: Use fresh tomatoes for a better taste.
Onion: I used sweet onion but ay one will work very well, even shallots will go well too.
Spices: I used rosemary and oregano dry, because I did’nt have fresh herbs on hand. I recomend use fresh rosemary for a better flavour.
Salt and pepper to taste
Extra virgin olive oil
Use fresh herbs for a better flavour , you can use parsley, basil, rosemary or oregano.
You could also sprinkle a some Parmesan cheese on top
How to bake this potato and onion baked
- First, peel and cut the potatoes. Cut the onion into thin strips and cut the tomato in pieces (Not very big)
- In a baking dish, add olive oil and the potatoes, tomatoes, onion and the herbs and spices you want. Mix everything together and bake at 180ºC or 350ºF for approx. 25 minutes or until you see that the potatoes are done.
- You could add chopped garlic before baking or any spice you like or a little carrot or chives.
- You can use a cast iron skillet
Can I use frozen chopped onions?
Yes, if you have a batch of frozen onion cutted in slices you can add them to the baking dish with the potatoes
Can I use sweet potatoes?
Yes, it will also be delicious. You can use any type of potato.
