A gluten-free diet basically means not eating foods that contain gluten, a gluten protein. Today it means eating natural foods, real foods. Gluten is a protein that acts as a binder and is found mainly in wheat, barley and rye.
Eating gluten-free doesn’t mean eating bland, tasteless or nutrient-poor meals. Basically, eating gluten-free means eating natural foods and using flours that are free of gluten protein.
If you’re just starting out on a gluten-free diet, you’ll find plenty of healthy gluten-free and lactose-free recipes on this blog. Yes, lactose free too, but these days there are many lactose free dairy products that are almost as good as the regular lactose free variety.
