Baking a homemade cake is very easy and you only need a few ingredients. With a little flour, sugar, milk, and eggs you can bake a cake.

This version of chocolate cake is a little different because I used some discard sourdough (glutenfree). If you have a sourdough starter you need to feed it and use some of the dough to properly “feed” it and keep it active… So this is a good recipe to use the “waste”.

The sourdough I used for this cake wasn’t active, so it didn’t make the cake “rise” and I had to add yeast. So why did I add the sourdough if wasn’t active? Well, to use some of that dough and add nutrients to the dough.

Sourdough is a fermented dough based on flour and water. Sourdough not only has many healthy nutrients but also makes the cake easier to digest and gives it moisture. This makes the dough more fluffy rather than grainy. Gluten-free flours don’t make cakes or bread particularly fluffy, sometimes they even become a bit dry. You can avoid this with sourdough.

  1. Room temperature ingredients It’s very important that you take the eggs, milk, and butter out of the fridge before making the cake.
  2. To melt the chocolate
    Chop the chocolate into very small pieces. Put a tablespoon of butter and the boiling milk in a bowl. Mix them together and add the chocolate pieces. You’ll see how quickly it melts.
  3. Cane sugar or brown sugar
    Use brown or cane sugar instead of white sugar to make this cake.
  4. A touch of cinnamon, vanilla, or nuts Don’t forget to add the final touch to the dough, either cinnamon powder, vanilla essence, or a few walnuts (pecans or regular nuts).

Step by step to prepare this glutenfree cake

The preparation of this cake is very simple. You just need to mix all the ingredients and bake the dough.

First, cut the chocolate into very small pieces and heat the milk until it boils. Put a tablespoon or two of butter in a large bowl and pour in the hot milk. Whisk until the butter is incorporated and add the chocolate. Whisk until the chocolate is melted.

Add to the bowl 1ith chocolate; the sugar, eggs, vanilla extract, sunflower oil, and sourdough. Beat well until all ingredients are well incorporated. Add the sifted flour, baking powder, and baking soda and beat the dough well.

Add the nuts to taste, mix and place the dough into a cake pan. Bake the cake for about 35- 45 minutes at 180ºC or until the cake is done.

Tip: For better consistency, sift the flour and beat the batter very well.

FAQ

Can the dough be frozen?

If you want, you can bake this cake and freeze it. But I don’t recommend freezing the raw dough. If you want to freeze it after baking, you need to let it cool enough (don’t put the cake in the freezer while it’s still warm).

Can vanilla essence be substituted for another ingredient?

Yes, you can replace it with a little cinnamon powder or honey.

Sunflower oil is perfect for cakes or bread.

What flours should I use if I want to bake them with gluten?

If you want to prepare it with gluten, replace the rice flour and corn flour with all-purpose flour or baking flour.

Can I replace the milk with cream?

I haven’t tried it, but you can substitute it and the cake will be a little sweeter.

If you want to make more than one cake, just double the amount.

I don’t have sourdough, what ingredient should I replace it with?

If you don’t have sourdough or just don’t want to add it to the cake, just add a little more flour (a few tablespoons) and a little more milk (a few tablespoons) and that’s it.
