Simple recipe for fluffy Gluten free sourdough pancakes. Gluten free, sugar free and dairy free sweet pancakes. I took this recipe from Lisa of Farmhouse on boone and adapted with gluten-free sourdough (but it’s super similar).

I love making pancakes with sourdough in the morning. Not only is it healthier, but they taste so much better and are easier to digest.

Sourdough has many benefits and adds many nutrients to the dough. It’s used not only for making bread or pizza dough, but also for pancakes.

  1. Preheat your pan
    Whether you’re using a stainless steel pan or a cast iron skillet, it’s important to preheat it well. Once it’s nice and hot, add a tablespoon of coconut oil or butter and you’ve got perfect pancakes.
  2. The perfect topping
    If you’ve a sweet tooth, sweeten the pancakes with some jam or Licaonat. Licaonat is a natural liquid cocoa without gluten and dairy. More info here.
  3. Sourdough
    To make pancakes healthier and easier to digest, you can use sourdough. Not only will they be delicious, but they’ll also be much lighter. Don’t forget to “feed” the sourdough a few hours beforehand so that it’s active.

All the ingredients to prepare these pancakes

To prepare these gluten-free pancakes you’ll need

Sourdough: The sourdough I use is gluten free and made from rice flour. The sourdough is perfect for this healthy pancake recipe, but don’t forget to feed your sourdough a few hours before baking the pancakes.

Egg. If you want this recipe vega, you could replace the egg and use 1 banana.

Coconut oil . If you don’t have coconut oil, you could also use butter.

Honey, salt and baking soda.

To grease the pan, you can use 1 tablespoon of coconut oil or one tablespoon of butter (I used lactose-free butter, but you can use any kind).
To serve, you can serve the pancakes with a little jam or Licaonat liquid natural cocoa.

You can replace the honey with white sugar

How to prepare these gluten free pancakes

Preparing this pancake recipe is quite easy!

Preheat your pan or frying pan and mix all the ingredients. To do this, put the sourdough, honey and coconut oil in a bowl. Mix everything well and add an egg, baking soda and salt.

When the pan is hot, add a tablespoon of butter (to taste). Using a ladle, pour a little of the batter into the pan. Wait a few seconds and when you see the batter start to form and come away from the bottom of the pan, flip the pancakes and wait a few seconds until they’re done.

Serve the pancakes with a little jam or licaonat

If you don’t have coconut oil, you can also use butter.

What’s licaonat?

Licaonat is a natural liquid cocoa with no additives, without nuts, gluten and dairy free. It’s suitable for celiacs, vegans, people with dairy and nut intolerance. Moreover, it’s handmade in Spain.
