There’s a Spanish brand that makes oatmeal cookies with a very unique flavor, these cookies are called “digestive”. I wanted to make a cookie with a similar flavor, but homemade and a healthier version. After some trial and error, I came up with a very similar cookies but gluten-free and lactose-free.

    I used a hazelnut “milk” and it adds sweetness to the cookies.
  2. Ingredients at room temperature
    For the best cookie consistency, add the butter, egg and milk at room temperature
  3. Avoid over-baking these gluten-free oatmeal cookies
    When you see that they’re golden brown, take them out of the oven and let them cool.
  4. Oat flour Grind the oatmeal to make flour (you don’t have to buy oatmeal).

How To bake these gluten-free oatmeal cookies

First you tu grain you oatsThe first thing you need to do is grind or crush your oats. You can do this with a grinder or a blender.

Once you’ve the rolled oats, all you’ve to do is mix in a bowl the brown sugar, butter, eggs, honey, milk and vanilla essence. Mix everything well and let the dough cool in the refrigerator (about 15-20 minutes).

When the cookie dough has cooled and is easier to work with, you can make the cookies.

Shape the cookies and place them on a baking sheet. Bake (with the oven preheated) for 10-15 minutes, until the cookies are golden brown. Take them out of the oven and let them cool on a wire rack.

Put two tablespoons of melted butter, two tablespoons of milk and the chocolate in a bowl. Mix them a little and heat the bowl in the microwave for 15-30 seconds. Stir well until the chocolate is melted (if it’s not melted yet, heat it again for 15 seconds). Add two tablespoons of powdered sugar and mix.

While the chocolate is still warm, pour the chocolate onto the cookies and let cool so that the chocolate settles on the cookies.

FAQ

Can I freeze the cookies?

Yes, you can freeze them after baking and take them out of the freezer 10-30 minutes before eating.

Can I substitute the vanilla essence?

Yes, you can use vanilla sugar or a little cinnamon instead.

If you use almond or hazelnut milk, the cookies will have more flavor

Can I also use regular milk?

Yes, of course. You can also add some nuts to the dough or a tablespoon of almond flour.

Ingredients

  • 250 gr gluten-free oat flour
  • 95 gr brown sugar
  • 30 ml honey
  • 1 tablespoon vanilla essence
  • a pinch og¡f salt
  • 135g butter(I used lactosefree butter)
  • 1 egg
  • 1/2 cup milk (I used vegan huzelnut "milk")
  • 120gr chocolate
  • 2 tbsp powdered sugar
