Here are some tips for making the best gluten-free chicken croquettes ever.

  1. Coat the croquettes twice
    To make them crispy on the outside, roll the croquettes first in breadcrumbs, then in egg, and then in breadcrumbs again. This way, the crust will be especially crispy and will not break open during frying.
  2. Pay attention to the resting time of the dough.
    In order for the croquettes to form well and fry them (without breaking), the dough must be cold. Therefore, the resting time in the fridge is essential.
  3. Serve them hot
    Croquettes are better hot! You will see that they taste better freshly prepared and hot.
  4. Paper towels Use paper towels to drip off the excess oil from the croquettes.

I used lactose free milk and butter, but you can use whatever you have at home.

If you want to make these Chicken croquettes with gluten, you can use all-purpose flour or wheat flour in the dough and coat the croquettes with regular breadcrumbs.

Step by step for these chicken croquettes

For this recipe, first roast the chicken breasts. If you have leftover roast chicken, you can use that. Shred the roasted chicken in a blender until you get very small pieces.

Put the butter in a pot and heat it over high heat. When it starts to melt, add the cornmeal. Stir with a few sticks, and when the flour starts to brown, add the milk, nutmeg, salt and pepper. Reduce the heat to medium and stir constantly until the mixture thickens.

Reduce the heat to low, add the chopped chicken and stir for a few minutes. Pour the mixture into a large bowl and cover with plastic wrap. Make sure the plastic wrap touches the dough, as you see in the video. Let rest in the fridge for at least 8 hours (ideally, prepare the dough the afternoon of the day before so you can have it ready to eat right away).

The next day, shape the croquettes with the help of a spoon

To coat the croquettes, whisk 2 eggs in a deep bowl with a tablespoon of water (approx). In another baking dish, add gluten-free bread crumbs. Coat the croquettes first in the bread crumbs, then in the beaten egg and again in the bread crumbs

Coat all the croquettes. If you get a lot of croquettes, you can freeze them in a tupperware and have homemade croquettes for another day in the freezer

Put plenty of sunflower oil in a frying pan and heat it on high. Put the croquettes in it and fry them until they are golden brown. Now you can enjoy the croquettes, but serve them immediately! Do not eat them cold!

Can you freeze these Chicken croquettes?

Yes, you can freeze the croquettes, but they must be raw, that is, not fried. To do this, prepare the dough as says in the recipe, coat the croquettes, place the coated croquettes in a tupperware and freeze. Make sure there is a space between each croquette so they do not stick together. Take the croquettes out of the freezer about 5-10 minutes before frying.

The only downside to freezing is that the croquettes can stick together. If you do not leave space between the croquettes when you freeze them, they will stick together a bit and maybe it’s a bit hard to separate them. If this happens to you and they stick together a little, let them thaw a little (about 10 minutes) and you will see that later they can be easily detached and pulled off.

Can the milk be replaced with a vegetable drink, such as soy or rice drink?

You can try, but they will not be as tasty. Honestly I didn’t try this recipe with a vegan/vegetable milk but you can try.

If you want to make them with gluten, you can use all-purpose flour, wheat flour and regular bread crumbs.

How many croquettes do you get with this recipe?

There are a lot of croquettes, but it depends on the size. If you make smaller croquettes, you will get about 40 croquettes, but if you make them bigger,you will get about 20 croquettes.

What breadcrumbs can I use?

I have used the gluten-free breadcrumbs from the Spanish supermarket Mercadona but any gluten-free breadcrumbs will do. If you don’t have breadcrumbs you can make them yourself by crushing dry bread.

If you want you can add a few pieces of ham to the croquette dough.
