If you want to make these homemade Blueberries banana muffins with gluten, just substitute wheat flour or baking flour for the gluten-free flour.

Step by step to prepare these gluten free Blueberries banana muffins

To make these homemade Blueberries banana muffins, first beat the egg with the sugar, coconut oil and vanilla extract. Add the 2 mashed bananas and mix everything well. If you like, you can use an electric mixer to avoid lumps in the batter.

Add the gluten-free flour mixture and mix well. Add the salt, baking powder, and psyllium husks. Beat well until all the ingredients are well incorporated.

Add the frozen blueberries and gently stir them in using a spatula.

Pour some of the batter into each muffin tray (or muffin paper). Bake for about 20-25 minutes at 180ºC. When golden brown, take them out of the oven and let them cool.

*To make sure they’re cooked inside, poke a toothpick into a muffin and if it comes out clean, it’s done.

Can you freeze the muffins?

You can freeze the already baked muffins in a plastic bag or tupperware.

Can vanilla essence be substituted with another ingredient?

Yes, you can replace it with vanilla sugar or a little honey.

If you don’t have the paper for the muffins, you can grease the pan with butter or oil. You can also cut the baking paper into squares slightly larger than the muffin tin and place them in the muffin tin.

You can replace the egg with a banana. You’ll need a total of 3 bananas.

Is the psyllium husk necessary?

It’s not absolutely necessary in this recipe. You can omit it and add 1 teaspoon of baking powder instead of the half teaspoon specified in the recipe.

If you don’t want to add bananas, you can replace them with eggs. Add 2 eggs (one egg for each banana you remove from the recipe). So you’ll need 3 eggs total.
